Instructions
- Preheat your oven to 400°F (200°C).
- Wash the sweet potatoes and pierce them with a fork.
- Place the sweet potatoes on a baking sheet and bake for about 45-60 minutes, or until tender.
- In a bowl, mix the ricotta cheese, chopped spinach, olive oil, shredded cheese, salt, and pepper.
