Description

Delightful sugar cut-out cookies that hold their shape perfectly, ideal for decorating or enjoying plain.


Ingredients

  • 1 cup butter (2 sticks at room temperature)
  • 1 cup sugar
  • 1 egg
  • 12 tsp lemon zest (from half a lemon)
  • 1 tsp baking powder
  • 1 tsp vanilla extract
  • 3 cups flour (plus extra for rolling out)
  • 1/2 tsp salt

Instructions

  1. In the bowl of a stand mixer, cream together the butter and sugar for about 3 minutes until light and fluffy.
  2. Add the egg, lemon zest, baking powder, and vanilla extract. Beat for another 2 minutes until creamy and yellow.
  3. Gradually add the flour and salt, mixing on low speed until combined, about 2 minutes.
  4. Press the dough together to form two balls. If crumbly, add a teaspoon of water.
  5. On a floured surface, roll out one dough ball to your desired thickness.
  6. Cut shapes using cookie cutters and place them on a parchment-lined baking sheet.
  7. Freeze the baking sheet for 10 minutes to help the cookies hold their shape.
  8. Preheat your oven to 350°F (175°C).
  9. Bake for about 10 minutes, or until the edges turn golden brown.
  10. Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes
