Ingredients

- 1 cup butter (2 sticks at room temperature)
- 1 cup sugar
- 1 egg
- 1–2 tsp lemon zest (from half a lemon)
- 1 tsp baking powder
- 1 tsp vanilla extract
- 3 cups flour (plus extra for rolling out)
- 1/2 tsp salt
Instructions
- In the bowl of a stand mixer, cream together the butter and sugar for about 3 minutes until light and fluffy.
- Add the egg, lemon zest, baking powder, and vanilla extract. Beat for another 2 minutes until creamy and yellow.
- Gradually add the flour and salt, mixing on low speed until combined, about 2 minutes.
- Press the dough together to form two balls. If crumbly, add a teaspoon of water.
- On a floured surface, roll out one dough ball to your desired thickness.
- Cut shapes using cookie cutters and place them on a parchment-lined baking sheet.
- Freeze the baking sheet for 10 minutes to help the cookies hold their shape.
- Preheat your oven to 350°F (175°C).
- Bake for about 10 minutes, or until the edges turn golden brown.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Chill the dough to prevent spreading and use quality ingredients for best results. Decorate with icing or enjoy plain.
