Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup pineapple juice
  • 1/2 cup soy sauce
  • 1/2 cup brown sugar
  • 1/4 cup ketchup
  • 1 tablespoon minced garlic
  • 1 tablespoon grated ginger
  • 1 bell pepper, sliced (optional)
  • 1 onion, sliced (optional)
  • Salt and pepper to taste
  • Green onions for garnish (optional)

Instructions

  1. Place the chicken breasts in the slow cooker.
  2. In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger.
  3. Pour the sauce over the chicken in the slow cooker.
  4. Add sliced bell pepper and onion if using.
  5. Season with salt and pepper.
  6. Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
  7. Shred the chicken and stir it back into the sauce.
  8. Serve warm, garnished with green onions if desired.

Notes

For extra flavor, marinate the chicken in the sauce for a few hours before cooking. Adjust the sweetness by using more or less brown sugar to match your taste.
