- 4 boneless, skinless chicken breasts
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1 bell pepper, sliced (optional)
- 1 onion, sliced (optional)
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions
- Place the chicken breasts in the slow cooker.
- In a medium bowl, whisk together the pineapple juice, soy sauce, brown sugar, ketchup, garlic, and ginger.
- Pour the sauce over the chicken in the slow cooker.
- Add sliced bell pepper and onion if using.
- Season with salt and pepper.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours until the chicken is cooked through and tender.
- Shred the chicken and stir it back into the sauce.
- Serve warm, garnished with green onions if desired.
Notes
For extra flavor, marinate the chicken in the sauce for a few hours before cooking. Adjust the sweetness by using more or less brown sugar to match your taste.
