A quick and budget-friendly dish combining sweet honey and rich garlic flavors with tender chicken thighs, perfect for busy weeknights.

- 8 boneless, skinless chicken thighs
- 2 tbsp cornflour (cornstarch)
- ½ tsp salt
- ½ tsp pepper
- 2 tbsp vegetable oil
- 1 tbsp unsalted butter
- 4 cloves minced garlic
- 110g (1/3 cup) honey
- 80ml (1/3 cup) chicken stock
- 1 tbsp rice vinegar
- 1 tbsp light soy sauce
- 1 tbsp finely chopped fresh parsley
- ½ tsp chilli flakes
- Boiled rice (for serving)
Instructions
- Cut the chicken thighs into 1-inch pieces and pat dry. Season with salt and pepper, then dredge in cornflour.
- In a bowl, mix honey, chicken stock, rice vinegar, soy sauce, minced garlic, and chilli flakes to create the sauce.
- Heat oil and butter in a skillet. Sear the chicken pieces for about 3-4 minutes on each side until golden brown, then remove them from the skillet.
- In the same skillet, lower heat and add the sauce mixture. Simmer until it thickens, about 2-3 minutes.
- Return seared chicken to the skillet, coating well with the sauce, and cook until chicken is fully cooked, reaching an internal temperature of 165°F.
- Garnish with parsley and serve immediately over boiled rice.
Notes
Perfect for meal prep and can be served with steamed vegetables or garnished with sesame seeds.
