Ingredients

- 2 lb chicken thighs (cut into 1-inch chunks)
- 3/4 cup teriyaki sauce
- 1 1/4 cup pineapple
- 1/2 tsp garlic powder
- 1 lb broccoli (cut into small florets)
- 2 tbsp olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the chicken chunks, teriyaki sauce, garlic powder, and pineapple in a large bowl. Toss until coated.
- Spread the chicken mixture out evenly on a large baking sheet.
- Drizzle the olive oil over the broccoli florets, toss to coat, and place around the chicken on the baking sheet.
- Bake for about 25-30 minutes, stirring halfway through, until the chicken is cooked through and the broccoli is tender.
- Remove from the oven and let cool for a couple of minutes before serving.
Notes
Best served hot with steamed jasmine rice or quinoa. Can be garnished with sesame seeds or chopped green onions.
