A tasty and easy one-pan meal featuring sweet pineapple, tender chicken, and nutritious broccoli, perfect for busy weeknights.


Ingredients

  • 2 lb chicken thighs (cut into 1-inch chunks)
  • 3/4 cup teriyaki sauce
  • 1 1/4 cup pineapple
  • 1/2 tsp garlic powder
  • 1 lb broccoli (cut into small florets)
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the chicken chunks, teriyaki sauce, garlic powder, and pineapple in a large bowl. Toss until coated.
  3. Spread the chicken mixture out evenly on a large baking sheet.
  4. Drizzle the olive oil over the broccoli florets, toss to coat, and place around the chicken on the baking sheet.
  5. Bake for about 25-30 minutes, stirring halfway through, until the chicken is cooked through and the broccoli is tender.
  6. Remove from the oven and let cool for a couple of minutes before serving.

Notes

Best served hot with steamed jasmine rice or quinoa. Can be garnished with sesame seeds or chopped green onions.
