- 1 can (15 oz) refried beans
- 1/4 cup water (to thin beans slightly)
- 1 cup red enchilada sauce (or mild taco sauce)
- 2 cups shredded Mexican blend cheese (or cheddar/monterey jack)
- 1/2 cup diced tomatoes
- 1/4 cup sliced green onions
- 1/4 cup sliced black olives (optional)
- Oil for frying (or cooking spray if baking)
Instructions
- Cook the ground beef in a skillet over medium heat until browned. Drain any excess fat, add the taco seasoning and water, and let it simmer for 5 minutes.
- Prepare the refried beans in a small saucepan with 1/4 cup of water until smooth.
- Crisp the tortillas by frying in oil for 1–2 minutes per side or baking at 400°F for 5–7 minutes.
- Assemble the pizza by placing one tortilla on a baking sheet, spreading a layer of warmed beans, seasoned meat, and topping with another tortilla and enchilada sauce, cheese, diced tomatoes, green onions, and olives.
- Bake the pizzas in a preheated oven at 400°F for 8–10 minutes until cheese is melted.
- Serve hot, sliced into quarters with optional toppings like sour cream or extra taco sauce.
