Description

Delicious and easy-to-make white rotisserie chicken enchiladas packed with flavor for a perfect family dinner.


Ingredients

  • 2 cups shredded rotisserie chicken
  • 1 cup cream of chicken soup
  • 1 cup sour cream
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 8 small flour tortillas
  • 1 cup green enchilada sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the shredded chicken, cream of chicken soup, sour cream, 1/2 cup of shredded cheese, garlic powder, onion powder, salt, and pepper in a mixing bowl. Mix well.
  3. Lay a tortilla flat and add a generous scoop of the chicken mixture. Roll it up tightly and place it seam-side down in a greased baking dish. Repeat this process with the remaining tortillas and filling.
  4. Pour the green enchilada sauce over the top and sprinkle with the remaining cheese.
  5. Bake for 20-25 minutes, until the top is bubbly and the cheese is melted.
  6. Serve hot, optionally garnished with chopped cilantro or sliced green onions.

Notes

For added flavor, serve with rice, beans, or a fresh green salad. Store leftovers in an airtight container for up to 3 days.
