Delicious and easy-to-make white rotisserie chicken enchiladas packed with flavor for a perfect family dinner.

- 2 cups shredded rotisserie chicken
- 1 cup cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 8 small flour tortillas
- 1 cup green enchilada sauce
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the shredded chicken, cream of chicken soup, sour cream, 1/2 cup of shredded cheese, garlic powder, onion powder, salt, and pepper in a mixing bowl. Mix well.
- Lay a tortilla flat and add a generous scoop of the chicken mixture. Roll it up tightly and place it seam-side down in a greased baking dish. Repeat this process with the remaining tortillas and filling.
- Pour the green enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for 20-25 minutes, until the top is bubbly and the cheese is melted.
- Serve hot, optionally garnished with chopped cilantro or sliced green onions.
Notes
For added flavor, serve with rice, beans, or a fresh green salad. Store leftovers in an airtight container for up to 3 days.
