Description

A refreshing twist on classic key lime pie featuring sweet mango puree and zesty lime, perfect for summer gatherings.


Ingredients

  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 can (14 oz) sweetened condensed milk
  • 1/2 cup fresh lime juice
  • 1 cup ripe mangoes, pureed
  • 1/2 cup heavy whipping cream
  • Zest of 1 lime
  • Fresh mango slices and lime wedges for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix graham cracker crumbs, sugar, and melted butter together in a bowl.
  3. Press this mixture into the bottom of a pie dish to form the crust.
  4. Bake for 8-10 minutes until lightly browned. Let the crust cool.
  5. Whisk together sweetened condensed milk, lime juice, mango puree, and lime zest in another bowl until combined.
  6. Pour this filling into the cooled crust.
  7. Bake the pie for 15-20 minutes until set.
  8. Remove the pie from the oven and let it cool completely.
  9. Whip the heavy cream until stiff peaks form, then spread it over the top of the pie.
  10. Garnish with fresh mango slices and lime wedges.
  11. Chill in the refrigerator for at least 2 hours before serving.

Notes

Store leftover pie covered in the refrigerator for up to 3 days. Choose ripe mangoes for the best flavor.
