- 1 lb chicken breast
- 4 cups chicken broth
- 1 tbsp turmeric
- 1 tbsp grated ginger
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large pot, heat a bit of oil over medium heat and sauté the onion, garlic, carrots, and celery until softened.
- Add the turmeric and ginger, stirring to combine.
- Add the chicken breast and chicken broth. Bring to a boil, then reduce heat and let simmer for 20-25 minutes until the chicken is cooked through.
- Remove the chicken, shred it, and return it to the pot.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh cilantro.
Notes
For extra flavor, add a splash of lemon juice before serving. You can also substitute chicken breast with thighs for a richer taste or add a pinch of red pepper flakes for spice.
