Description

A comforting dish combining creamy twice-baked potatoes in a convenient casserole form, perfect for gatherings or cozy dinners.


Ingredients

  • 4 large baking potatoes
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup butter
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked chicken, shredded (or vegetarian alternative)
  • 1/4 cup green onions, sliced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baking potatoes, pierce them with a fork, and bake in the preheated oven for about 45 minutes or until tender.
  3. Let the potatoes cool slightly, then scoop out the insides and place them in a mixing bowl.
  4. Add sour cream, milk, butter, half of the cheese, chicken, green onions, salt, and pepper to the potatoes and mash until smooth.
  5. Transfer the mixture into a greased baking dish and spread it out evenly.
  6. Top with the remaining cheese.
  7. Cover with foil and bake for 30 minutes.
  8. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
  9. Let cool slightly before serving.

Notes

For extra flavor, add garlic powder or onion powder. Mix in cooked broccoli or spinach for added nutrition.
