- 4 large baking potatoes
- 1 cup sour cream
- 1/2 cup milk
- 1/2 cup butter
- 1 cup shredded cheddar cheese
- 1/2 cup cooked chicken, shredded (or vegetarian alternative)
- 1/4 cup green onions, sliced
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the baking potatoes, pierce them with a fork, and bake in the preheated oven for about 45 minutes or until tender.
- Let the potatoes cool slightly, then scoop out the insides and place them in a mixing bowl.
- Add sour cream, milk, butter, half of the cheese, chicken, green onions, salt, and pepper to the potatoes and mash until smooth.
- Transfer the mixture into a greased baking dish and spread it out evenly.
- Top with the remaining cheese.
- Cover with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden.
- Let cool slightly before serving.
Notes
For extra flavor, add garlic powder or onion powder. Mix in cooked broccoli or spinach for added nutrition.
