- 12 oz pasta (fusilli or penne)
- 1 cup cherry tomatoes, halved
- 1 cup diced cucumber
- 1/2 cup black olives, sliced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, diced
- 1/2 cup mozzarella balls (bocconcini)
- 1/3 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tbsp red wine vinegar
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Once cooked, drain and rinse it under cold water to cool it down.
- Combine the cooled pasta with cherry tomatoes, cucumber, black olives, bell pepper, red onion, mozzarella balls, and fresh basil in a large bowl.
- Whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
- Pour the dressing over the salad and toss everything together to combine well.
- Chill the pasta salad in the refrigerator for at least 30 minutes before serving to let the flavors blend.
Notes
Serve cold or at room temperature. Perfect as a side dish or on its own. Can add lemon juice, grilled chicken, or feta for variations.
