Description

A refreshing and tasty pasta salad featuring a mix of fresh vegetables and a zesty dressing, perfect for any season.


Ingredients

  • 12 oz pasta (fusilli or penne)
  • 1 cup cherry tomatoes, halved
  • 1 cup diced cucumber
  • 1/2 cup black olives, sliced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup mozzarella balls (bocconcini)
  • 1/3 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions. Once cooked, drain and rinse it under cold water to cool it down.
  2. Combine the cooled pasta with cherry tomatoes, cucumber, black olives, bell pepper, red onion, mozzarella balls, and fresh basil in a large bowl.
  3. Whisk together the olive oil, red wine vinegar, Italian seasoning, salt, and pepper in a small bowl.
  4. Pour the dressing over the salad and toss everything together to combine well.
  5. Chill the pasta salad in the refrigerator for at least 30 minutes before serving to let the flavors blend.

Notes

Serve cold or at room temperature. Perfect as a side dish or on its own. Can add lemon juice, grilled chicken, or feta for variations.
