A perfect one-pan dinner combining flavorful BBQ chicken with nutritious sweet potatoes and colorful vegetables.


Ingredients

  • 2 medium Sweet potatoes
  • 2 cups Cooked chicken
  • 1 cup BBQ sauce
  • 1 Red onion, chopped
  • 1 cup Corn
  • 1 cup Cheddar cheese, shredded
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 1/2 teaspoon Black pepper
  • 1 teaspoon Smoked paprika
  • 2 Green onions, chopped

Instructions

  1. Peel and dice the sweet potatoes. Heat olive oil in a skillet over medium heat. Add the sweet potatoes and season with salt, black pepper, and smoked paprika. Cook until tender.
  2. Chop the red onion and add it to the skillet along with the corn. Stir everything together and allow it to cook for a few minutes until the vegetables are soft.
  3. Mix in the cooked chicken and BBQ sauce. Stir well until everything is combined and heated through.
  4. Sprinkle cheddar cheese on top and cover the skillet until the cheese melts. Once melted, garnish with chopped green onions, and your dish is ready to serve!

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or microwave until hot.
