Description

A comforting dish with creamy cheese and tender orzo, perfect for busy weeknights or gatherings.


Ingredients

  • 2 cups chicken broth
  • 3 cups water
  • 1 1/2 cups orzo
  • 1 tablespoon butter
  • 1/2 teaspoon kosher salt
  • 1/8 teaspoon ground black pepper
  • 1/4 teaspoon lemon zest
  • 1 1/2 cups colby jack cheese (grated)

Instructions

  1. Add chicken broth and water to a medium saucepan.
  2. Cover and bring to a boil.
  3. Add orzo and let it simmer, uncovered, for 8-10 minutes or until cooked al dente.
  4. Reserve 1/2 cup of the pasta water.
  5. Drain the orzo and return it to the pan, but remove it from heat.
  6. Add butter, salt, pepper, lemon zest, and cheese. Gently stir to combine until the cheese melts.
  7. Add splashes of the reserved pasta water to thin out the mixture for a creamier consistency.
  8. Taste and adjust salt, pepper, or lemon zest if needed.
  9. Serve and enjoy!

Notes

For creaminess, add extra cheese or mix in other cheeses like parmesan. Stir occasionally while cooking to prevent sticking.
