- 2 cups rotisserie chicken, shredded
- 1 can (10.5 oz) cream of chicken soup
- 4 cups chicken broth
- 1 cup refrigerated biscuit dough
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup peas
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Combine chicken broth, cream of chicken soup, carrots, celery, peas, and thyme in a large pot. Bring to a simmer over medium heat.
- Cut the refrigerated biscuit dough into quarters while the soup is simmering.
- Add the shredded rotisserie chicken to the pot and stir well.
- Drop the biscuit pieces into the simmering soup.
- Cover and cook for about 10-15 minutes, or until the dumplings are cooked through.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh herbs if desired.
Notes
For a healthier option, use low-sodium chicken broth and whole grain biscuit dough. Feel free to add other vegetables like corn or green beans.
