- 1/2 cup butter (softened)
- 1/3 cup vegetable or canola oil
- 1/2 cup granulated sugar
- 1/4 cup powdered sugar
- 1 egg (at room temperature)
- 1 tsp vanilla extract
- 2 1/3 cups flour
- 1/4 tsp salt
- 1 tsp baking powder
- 5 tbsp butter (for filling)
- 2/3 cup brown sugar
- 1 1/4 cups chopped pecans
- 1 tsp vanilla extract (for filling)
- 1/3 cup heavy cream
- 1/4 tsp cinnamon
- 1 pinch nutmeg
- 1 pinch salt (for filling)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
- In a mixing bowl, combine softened butter, vegetable oil, granulated sugar, and powdered sugar. Mix until light and fluffy, about 2-3 minutes at medium speed.
- Add egg and vanilla extract, mixing until well combined.
- Mix in flour, salt, and baking powder until a dough forms.
- Scoop out 9 equal balls of dough and place on the baking sheet, flattening each to about 1 inch thick.
- Press down the center of each cookie with a 1/4 measuring cup to create space for the filling.
- Bake cookies for 8-9 minutes until slightly soft in the middle. Cool for a few minutes on the baking sheet.
- In a saucepan, melt 5 tbsp butter over medium heat. Stir in brown sugar until dissolved, then add pecans, vanilla extract, heavy cream, cinnamon, nutmeg, and salt. Cook for 2-3 minutes until combined.
- Spoon the pecan pie filling into the center of each slightly cooled cookie.
- Return filled cookies to the oven and bake for an additional 5-7 minutes until filling sets.
- Allow cookies to cool completely before serving.
Notes
Serve warm with ice cream or a drizzle of chocolate for added flavor. Great for gifting in a jar.
