Delightful cookies combining the rich flavors of pecan pie with a fun twist, featuring a crispy exterior and gooey, nutty center.


Ingredients

  • 1/2 cup butter (softened)
  • 1/3 cup vegetable or canola oil
  • 1/2 cup granulated sugar
  • 1/4 cup powdered sugar
  • 1 egg (at room temperature)
  • 1 tsp vanilla extract
  • 2 1/3 cups flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 5 tbsp butter (for filling)
  • 2/3 cup brown sugar
  • 1 1/4 cups chopped pecans
  • 1 tsp vanilla extract (for filling)
  • 1/3 cup heavy cream
  • 1/4 tsp cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt (for filling)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. In a mixing bowl, combine softened butter, vegetable oil, granulated sugar, and powdered sugar. Mix until light and fluffy, about 2-3 minutes at medium speed.
  3. Add egg and vanilla extract, mixing until well combined.
  4. Mix in flour, salt, and baking powder until a dough forms.
  5. Scoop out 9 equal balls of dough and place on the baking sheet, flattening each to about 1 inch thick.
  6. Press down the center of each cookie with a 1/4 measuring cup to create space for the filling.
  7. Bake cookies for 8-9 minutes until slightly soft in the middle. Cool for a few minutes on the baking sheet.
  8. In a saucepan, melt 5 tbsp butter over medium heat. Stir in brown sugar until dissolved, then add pecans, vanilla extract, heavy cream, cinnamon, nutmeg, and salt. Cook for 2-3 minutes until combined.
  9. Spoon the pecan pie filling into the center of each slightly cooled cookie.
  10. Return filled cookies to the oven and bake for an additional 5-7 minutes until filling sets.
  11. Allow cookies to cool completely before serving.

Notes

Serve warm with ice cream or a drizzle of chocolate for added flavor. Great for gifting in a jar.
