Description
A fresh and light salad made with cucumbers, tomatoes, and avocado, dressed in lemon and olive oil.
Ingredients

- 2 cups cucumbers, diced
- 2 cups tomatoes, diced
- 1 avocado, diced
- 1/4 cup red onion, chopped (optional)
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large bowl, combine the diced cucumbers, tomatoes, avocado, and red onion (if using).
- In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Add the chopped cilantro and toss again.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.
Notes
Use ripe but firm avocado for best results. Mix gently to avoid mashing the avocado.
