Description

A fresh and light salad made with cucumbers, tomatoes, and avocado, dressed in lemon and olive oil.


Ingredients

  • 2 cups cucumbers, diced
  • 2 cups tomatoes, diced
  • 1 avocado, diced
  • 1/4 cup red onion, chopped (optional)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lemon
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the diced cucumbers, tomatoes, avocado, and red onion (if using).
  2. In a separate small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
  3. Pour the dressing over the salad and toss gently to combine.
  4. Add the chopped cilantro and toss again.
  5. Serve immediately or chill in the refrigerator for 30 minutes before serving.

Notes

Use ripe but firm avocado for best results. Mix gently to avoid mashing the avocado.
