Description

A fresh and healthy salad with crisp cucumbers, ripe tomatoes, and a simple olive oil and vinegar dressing.


Ingredients

  • 2 cucumbers
  • 3 tomatoes
  • 1/2 red onion
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Wash and slice the cucumbers and tomatoes.
  2. Dice the red onion.
  3. In a large bowl, combine the cucumbers, tomatoes, and red onion.
  4. In a small bowl, whisk together olive oil, red wine vinegar, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Garnish with fresh basil leaves before serving.
