A delightful twist on a classic picnic favorite, merging creamy deviled eggs with hearty macaroni.


Ingredients

  • 2 cups elbow macaroni
  • 4 hard-boiled eggs, chopped
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon apple cider vinegar
  • 1/4 cup chopped green onions
  • Salt and pepper to taste
  • Paprika for garnish

Instructions

  1. Cook elbow macaroni according to package instructions; drain and let cool.
  2. In a large bowl, combine the chopped hard-boiled eggs, mayonnaise, Dijon mustard, apple cider vinegar, and green onions.
  3. Add the cooled macaroni to the egg mixture and stir until well combined.
  4. Season with salt and pepper to taste.
  5. Transfer the salad to a serving dish and sprinkle with paprika.
  6. Chill in the refrigerator for 30 minutes before serving.

Notes

For added crunch, consider mixing in some diced celery or bell peppers. Adjust the tanginess by adding more or less vinegar according to your taste.
