A delightful treat combining the creaminess of cheesecake with tangy lemon, perfect for any occasion.


Ingredients

  • 2 cups Greek yogurt
  • 1/2 cup cream cheese, softened
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 1/2 cup lemon juice
  • 2 teaspoons lemon zest
  • 1 teaspoon vanilla extract
  • 1/2 cup graham cracker crumbs
  • 1/4 cup butter, melted

Instructions

  1. Preheat the oven to 350°F (175°C). Grease an 8×8 inch baking dish.
  2. Mix graham cracker crumbs and melted butter in a bowl. Press the mixture into the bottom of the prepared dish to form a crust.
  3. Beat together Greek yogurt, cream cheese, sugar, honey, lemon juice, lemon zest, and vanilla extract until smooth in a separate bowl.
  4. Pour the cheesecake mixture over the crust and spread it evenly.
  5. Bake for 25-30 minutes or until set.
  6. Allow to cool completely, then refrigerate for at least 2 hours before cutting into bars.
