Description

A delicious and healthy stir-fry featuring mixed vegetables and quinoa, perfect for a nutritious dinner.


Ingredients

Scale
  • 2 cups of mixed vegetables (bell peppers, broccoli, carrots)
  • 1 cup of cooked quinoa or brown rice
  • 1 tablespoon olive oil
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the mixed vegetables to the pan and sauté for about 5-7 minutes or until they are tender.
  3. Stir in the cooked quinoa or brown rice.
  4. Add the low-sodium soy sauce, garlic powder, salt, and pepper. Mix well.
  5. Continue to cook for another 2-3 minutes until everything is heated through.
  6. Remove from heat and garnish with fresh herbs if desired.

Notes

Serve warm, optionally alongside a light salad. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
