- 1 cup cherry tomatoes, halved
- 1/2 red onion, diced
- 1/2 cup Greek yogurt

Instructions
- If using fresh corn, grill it until charred, then cut the kernels off the cob. If using frozen corn, simply thaw it.
- In a large bowl, combine the corn, cherry tomatoes, and red onion.
- In a separate bowl, mix the Greek yogurt, lime juice, salt, and pepper together.
- Pour the yogurt dressing over the corn mixture and toss to combine.
- Add the chopped cilantro and mix gently.
- Chill in the refrigerator for 30 minutes before serving.
