Description

A delicious and easy meal combining juicy chicken and crispy potatoes with sweet and tangy BBQ sauce.


Ingredients

  • 2 large chicken breasts
  • 4 medium potatoes, diced
  • 1/2 cup honey BBQ sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the diced potatoes with olive oil, salt, pepper, garlic powder, and paprika in a mixing bowl; toss to coat.
  3. Spread the potatoes on a baking sheet and roast in the preheated oven for about 20 minutes.
  4. Season the chicken breasts with salt and pepper while the potatoes are roasting.
  5. Add the chicken breasts to the baking sheet with the potatoes, and brush the honey BBQ sauce over the chicken after 20 minutes.
  6. Return to the oven and roast for an additional 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden and tender.
  7. Garnish with chopped green onions before serving.

Notes

Make sure to cut the potatoes into even sizes for uniform cooking. Feel free to experiment with spices for added flavor.
