- 2 large chicken breasts
- 4 medium potatoes, diced
- 1/2 cup honey BBQ sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the diced potatoes with olive oil, salt, pepper, garlic powder, and paprika in a mixing bowl; toss to coat.
- Spread the potatoes on a baking sheet and roast in the preheated oven for about 20 minutes.
- Season the chicken breasts with salt and pepper while the potatoes are roasting.
- Add the chicken breasts to the baking sheet with the potatoes, and brush the honey BBQ sauce over the chicken after 20 minutes.
- Return to the oven and roast for an additional 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (75°C) and the potatoes are golden and tender.
- Garnish with chopped green onions before serving.
Notes
Make sure to cut the potatoes into even sizes for uniform cooking. Feel free to experiment with spices for added flavor.
