- 4 chicken breasts
- 1/4 cup honey
- 1/4 cup lime juice
- 2 cups diced mango
- 1/4 red onion, diced
- 1/4 cup chopped cilantro
- 1 jalapeño, minced
- Salt and pepper to taste
Instructions
- Combine honey and lime juice to create a marinade. Add chicken breasts and marinate for at least 30 minutes.
- Preheat the grill or oven to medium-high heat.
- Remove chicken from the marinade and grill or bake until cooked through (about 6-7 minutes per side).
- Mix together diced mango, red onion, cilantro, jalapeño, and salt and pepper to create the salsa.

Notes
For extra flavor, let the chicken marinate for longer, up to 2 hours if you can. Use ripe mango for the salsa for the best taste.
