Ingredients

  • 2 cups granulated sugar
  • 3/4 cup buttermilk
  • 1/3 cup key lime juice or lemon juice
  • 5 large eggs (room temp)
  • 3 cups all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • Green food coloring (optional)
  • 2 cups powdered sugar (for glaze)
  • 34 tablespoons key lime juice or lemon juice (for glaze)

Instructions

  1. Preheat your oven to 350°F and grease a bundt or loaf pan.
  2. Combine buttermilk and lime juice in a small bowl and set aside.
  3. Cream together the butter and granulated sugar until fluffy.
  4. Add eggs one at a time, mixing well after each.
  5. Mix the flour, salt, baking powder, and baking soda in a separate bowl.
  6. Gradually alternate adding the flour mixture and buttermilk mixture to the butter mixture.
  7. Stir in green food coloring if desired.
  8. Spoon batter into the prepared pan(s) and bake for 50-60 minutes.
  9. Check for doneness with a toothpick; it should come out clean.

Notes
