  • 1 lb shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1 lemon, juiced and zested
  • 2 tbsp olive oil
  • 1/2 cup Parmesan cheese, grated
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add minced garlic and sauté for about 1 minute until fragrant.
  3. Add the shrimp to the skillet, season with salt and pepper, and cook until pink and opaque, about 2-3 minutes.
  4. Meanwhile, cook orzo according to package instructions. Drain and set aside.
  5. Once the shrimp is cooked, add the cooked orzo to the skillet along with lemon juice and zest.
  6. Stir in Parmesan cheese until well combined.
  7. Garnish with chopped parsley and serve warm.

Notes

Use fresh shrimp for the best flavor. Don’t overcook the shrimp; they should be just pink and opaque. You can add vegetables like spinach or cherry tomatoes for extra nutrition.
