Delightful dessert bars combining the sweetness of ripe mangoes with a buttery crust.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 3 ripe mangoes, pureed
  • 1 cup sweetened condensed milk
  • 2 large eggs
  • 1 tablespoon lime juice
  • Zest of 1 lime
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the flour, softened butter, granulated sugar, vanilla extract, and salt until crumbly.
  3. Press the dough evenly into the bottom of a greased 9×13 inch baking dish.
  4. Bake for about 15 minutes until lightly golden.
  5. Combine pureed mangoes, sweetened condensed milk, eggs, lime juice, and lime zest in another bowl and blend until smooth.
  6. Stir in cornstarch until well incorporated.
  7. Pour the mango filling over the crust and spread it evenly.
  8. Bake for an additional 25-30 minutes until set.
  9. Allow the dessert to cool completely before cutting it into bars.
