  • 2 garlic cloves (minced)
  • ⅓ cup grated parmesan
  • ⅓ cup breadcrumbs (Italian or plain; add 1 tsp Italian seasoning to plain breadcrumbs!)
  • ½ tsp cracked pepper
  • ½ – ¾ tsp sea salt
  • 2 lb red potatoes (cut into bite-sized pieces; if small, quartered, larger potatoes cut into 6ths or 8ths)
  • 1 – 2 garlic clove (minced)
  • 2 Tbsp olive oil
  • 2 Tbsp grated parmesan
  • Salt and pepper (to taste)
  • 1 lb fresh green beans (ends trimmed)
  • 1 Tbsp olive oil
  • 1 garlic clove (minced)
  • 1 Tbsp parmesan (optional)
  • Salt and pepper (to taste)

Directions:

  1. Preheat your oven to 425°F (220°C). Line a sheet pan with parchment paper for easier cleanup or spray with cooking oil.
  2. In a medium bowl, mix all ingredients for the potatoes: red potatoes, 2 Tbsp olive oil, 1-2 minced garlic cloves, 2 Tbsp grated parmesan, salt, and pepper. Stir well to coat everything evenly.
  3. Spread the potatoes on one-third of the pan. Bake for about 10-15 minutes. If you prefer your potatoes browned, leave them in for an extra five minutes.
  4. While the potatoes are cooking, prepare the chicken. In the same bowl, mix chicken breast, 2 Tbsp olive oil, 2 minced garlic cloves, ⅓ cup grated parmesan, ⅓ cup breadcrumbs, cracked pepper, and sea salt. Coat the chicken well.
  5. After the potatoes have cooked for a bit, take out the pan and add the chicken.
  6. Toss together the ingredients for the green beans: fresh green beans, 1 Tbsp olive oil, 1 minced garlic clove, optional parmesan, and salt and pepper. Add them to the pan.
  7. Bake everything for about 25 minutes or until the chicken reaches an internal temperature of 165°F (74°C). For extra crispy potatoes, switch the oven to broil on high for another 4-5 minutes, if desired.
  8. Remove the pan from the oven and let it cool for a few minutes before serving. Enjoy!
