Description

A colorful salad featuring roasted beets and carrots topped with creamy burrata cheese, perfect for a light lunch or elegant starter.


Ingredients

  • 2 medium beets
  • 2 medium carrots
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 ounces burrata cheese
  • Mixed greens (optional)
  • Balsamic vinegar (optional)

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the beets and carrots into bite-sized pieces.
  3. Toss the beets and carrots with olive oil, salt, and pepper.
  4. Spread them out on a baking sheet and roast for 20-25 minutes until tender.
  5. Allow to cool slightly, then arrange the roasted vegetables on a plate.
  6. Top with burrata cheese and mixed greens, if using.
  7. Drizzle with balsamic vinegar if desired.
  8. Serve immediately.
