Ingredients

- 2 medium beets
- 2 medium carrots
- 1 tablespoon olive oil
- Salt and pepper to taste
- 4 ounces burrata cheese
- Mixed greens (optional)
- Balsamic vinegar (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- Peel and chop the beets and carrots into bite-sized pieces.
- Toss the beets and carrots with olive oil, salt, and pepper.
- Spread them out on a baking sheet and roast for 20-25 minutes until tender.
- Allow to cool slightly, then arrange the roasted vegetables on a plate.
- Top with burrata cheese and mixed greens, if using.
- Drizzle with balsamic vinegar if desired.
- Serve immediately.
