Description

A delicious and easy Rotel Pasta meal featuring zesty Rotel tomatoes and creamy cheese, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef
  • 1 can Rotel tomatoes
  • 1 package pasta (your choice, such as rotini or penne)
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup beef broth
  • 1 onion, chopped
  • 1 packet taco seasoning
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef with the chopped onions over medium heat. Once the beef is no longer pink, drain the excess fat.
  2. Combine the browned beef, Rotel tomatoes, beef broth, and pasta in a crockpot. Stir everything well to mix.
  3. Cover the crockpot and cook on low for 240-360 minutes or on high for 120-180 minutes until the pasta is cooked.
  4. Stir in the shredded cheese until it melts.
  5. Add salt and pepper to taste before serving.

Notes

For added flavor, consider including diced bell peppers or corn. You can also use a plant-based substitute for the beef to make it vegetarian.
