- 1 lb ground beef
- 1 can Rotel tomatoes
- 1 package pasta (your choice, such as rotini or penne)
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup beef broth
- 1 onion, chopped
- 1 packet taco seasoning
- Salt and pepper to taste
Instructions
- Brown the ground beef with the chopped onions over medium heat. Once the beef is no longer pink, drain the excess fat.
- Combine the browned beef, Rotel tomatoes, beef broth, and pasta in a crockpot. Stir everything well to mix.
- Cover the crockpot and cook on low for 240-360 minutes or on high for 120-180 minutes until the pasta is cooked.
- Stir in the shredded cheese until it melts.
- Add salt and pepper to taste before serving.
Notes
For added flavor, consider including diced bell peppers or corn. You can also use a plant-based substitute for the beef to make it vegetarian.
