- 4 boneless, skinless chicken breasts (or thighs for extra juiciness)
- 2 tablespoons olive oil
- 3 tablespoons unsalted butter (divided)
- 1 medium onion (finely chopped)
- 3 cloves garlic (minced)
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tablespoon fresh parsley (chopped, plus extra for garnish)
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon ground black pepper
- 1/2 teaspoon salt (adjust to taste)
- A pinch of cayenne pepper (optional)
Instructions
- Pat the chicken dry with paper towels and season generously with salt, pepper, smoked paprika, garlic powder, and onion powder.
- Heat 2 tablespoons of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Add the chicken and cook for 4-5 minutes per side until golden brown.
- Remove the chicken and set aside on a plate.
- Lower the heat to medium, add 1 tablespoon of butter and chopped onion. Sauté for 3-4 minutes until soft.
- Add minced garlic and cook for another 30 seconds.
- Pour in the chicken broth, scrape up browned bits, then add heavy cream and Parmesan cheese. Stir until smooth.
- Return the chicken to the skillet, spoon sauce over the top, and simmer for 8-10 minutes until cooked through.
- Sprinkle chopped parsley over the dish and serve hot.
Notes
For extra juiciness, use chicken thighs. Adjust seasoning and add veggies for more flavor and nutrition.
